Training system: Guyot. - Installation date: 1991/2009
Variety: R2, Valenti selection and valorization of old Staffolo clones.
Type of soil: Calcareous, sandy, clayey. - Vineyard exposure: South-West. - Vineyard yield: 1-1.5 kg/plant.
Harvest: Manual in boxes, with selection of the grapes in the vineyard.
Vinification: Selection of the bunch in the vineyard, followed by pressing. Sorting of musts and cold static decantation. Alcoholic fermentation at a controlled temperature in steel. Second fermentation in autoclave with Martinotti method.
Organoleptic notes
Light straw yellow color, with greenish reflections.
Floral sensations (Jasmine and Acacia flower) are accompanied by sensations of fresh fruits (peach and pear).
Excellent balance between acidity and sugars with excellent persistence. The bubble is not intrusive but integrates the floral and savory sensations.
Fine and intense bubble perlage with chains of bubbles that run the entire height of the glass.
Pairings: Aperitifs, starters in general, preferably fish-based. Also recommended throughout the meal.
