Verdicchio Castelli Jesi DOC Classico Finocchi, winemakers in the hills of Staffolo.
Training system: Guyot. - Installation date: 1984/88
Variety: R2, Valenti selection and valorization of old Staffolo clones.
Type of soil: Calcareous, sandy, clayey. - Vineyard exposure: South-West. - Vineyard yield: 1.5-2 Kg/plant.
Harvest: Manual cassettes in maturity.
Vinification: Soft pressing, static cold decantation of the must and fermentation at a controlled temperature with selected yeasts.
Organoleptic notes
Straw yellow color with greenish reflections
The wine expresses an intense and elegant mineral connotation, enhancing the flavor, characteristic of the Verdicchio cultivar. After shaking the glass, intense floral notes are found, with yellow and white flowers (hawthorn)... it presents a soft attack, without sugar residues, immediately characterized by the acid component, which is counterbalanced by the flavour.
The aromas remain long with mineral and floral references with a light bitter note in the finish.
Pairings: Starters, fish dishes, first courses, white meats, fresh cheeses or as an aperitif.
In the Marche the typical pairing is rabbit in porchetta or chicken in potacchio.
