"Lieto Fine" passito wine from overripe SorRico grapes; it is the happy ending of every lavish banquet.
Winemaking area: Stacciola. Marche (PU). - Soil type: medium texture - clayey.
Harvest period: Based on the weather conditions and the quality of the grapes, we try to postpone the harvest as much as possible.
Harvesting method: grapes harvested by hand in small crates.
Vinification: immediately after arriving in the cellar, the bunches are carefully arranged in small boxes, which are then stacked in a ventilated place for subsequent drying. Soft pressing and fermentation in steel vats at controlled temperatures.
Aging: 6 months in steel vats, 24 months in oak barriques.
Organoleptic notes
Brilliant, deep golden yellow with amber reflections.
Chestnut honey, dates and dehydrated exotic fruit. Slight ethereal note.
Sweet but not cloying, with good freshness. Very light balsamic note.
Pairings: Dry pastries, shortcrust pastry desserts, tarts, mature and blue cheeses. But also alone for pleasant meditations.
