Zuppa Sottobosco is a legume soup (hulled grass pea, chickpeas, lentils) with aromatic herbs, mushrooms and chestnuts that we can all find while walking through the woods of the Apennines.
Bona Usanza has already put three soups on the market (La Zuppa dei Conti, La Zuppa Verde, La Zuppa del Sole) and now offers you Zuppa Sottobosco. The inspiring line is always the same: following nature with its aromas and its clean and genuine flavors. We invite you to taste it.
INGREDIENTS: Hulled Cicerchia di Serra de’ Conti (Slow Food Presidium), split chickpea, hulled lentil, chopped chestnuts, porcini mushrooms (Boletus edulis) and chanterelles (Cantharellus cibarius), aromatic herbs (Thymus vulgaris, Satureja montana, Artemisia dracunculus).
Preparation tips: Start with a classic soffritto of celery, carrot and onion, add broth (350 ml for every 50 g of preparation) and pour in the desired amount of soup (without soaking). Boil for 35/40 minutes, adding a few ladles of broth if necessary.
With the entire package you can obtain 6 portions of soup. Serve with a drizzle of good extra virgin olive oil, garlic and parsley if you like.
