The Solfino bean has come back to life in the Marche region, in Serra de' Conti.
Small, swollen, pale yellow (like sulphur), it is highly appreciated for its excellent organoleptic qualities.
It has a very thin skin, creamy consistency, delicate flavor and excellent ability to withstand cooking.
To savor all its qualities, it is recommended to taste it just boiled, still hot, with a drizzle of extra virgin olive oil and a pinch of salt.
It is sown in April and harvested at the end of July; it requires a lot of cultivation care and the harvesting is done manually.
