The Cicerchia di Serra de’ Conti (Slow Food Presidium) is hulled, small and angular, does not need to be soaked and cooks in just over half an hour.
The cicerchia, Lathyrus sativus, is a grain legume with very ancient origins and comes from the Middle East; the Greeks called it Lathiros, for the Romans it was Cicerula. In Italy there were about twenty species, grown in the center and south.
Like all legumes it has interesting nutritional characteristics, both for the high protein and starch content and for the low quantity of fat. Good presence of vitamins B1, B2 and PP, calcium, phosphorus and fiber.
In addition to being a tasty food, it can be stored dry for a long time.
It is excellent for making purees to season with wild herbs, crispy bacon or fish (e.g. stockfish). Easy to prepare, does not require soaking and cooks in just over half an hour.
