Zuppa Verde (dry mix without soaking) is a legume soup with wild herbs from our hills in the Marche region.
There are 5 dried wild herbs: stridoli (Silene vulgaris), dandelion (Taraxacum officinale), crepes (Sonchus oleraceus), mustard (Sinapis alba), borage (Borago officinalis).
The soup is also enriched with aromatic herbs grown by us (oregano, savory, thyme, rosemary).
Combining legumes and wild herbs means maintaining our traditions, looking to the future by rediscovering healthy eating habits, affirming the need to bring natural products to our tables.
Ingredients: hulled Serra de' Conti grass pea (Slow Food Presidium), lentil, hulled lentil, split chickpea, Pìppoli (pasta-type specialty made from grass pea and chickpea flour), mix of 5 dried wild herbs (Silene vulgaris, Taraxacum officinale , Sonchus oleraceus, Sinapis alba, Borrago officinalis ), oregano, savory, thyme, rosemary.
Preparation advice: start with a classic sautéed celery, carrot and onion, add broth (300 ml for every 50 g of preparation) and pour the desired quantity of soup (without soaking beforehand). Boil for 35 minutes. With the whole package you can get 6 portions of soup that you will serve with a drizzle of good extra virgin olive oil
