Type of soil: Calcareous, sandy, clayey. - Vineyard exposure: South-West. - Vineyard yield: 1-1.5 kg/plant.
Harvest: Manual in boxes, with selection of grapes in the vineyard and morning harvest.
Vinification: Soft pressing, static decantation of the free-run must at cold temperatures and fermentation at a controlled temperature with selected yeasts.
Aging in wood (barrique) on the fermentation lees, continuously in suspension (batonage).
Organoleptic notes
Straw yellow color with golden reflections.
Notes of caramelized apple, brioche bread, vanilla, almond and coconut and spices such as untoasted tobacco.
Soft attack with a consistent but balanced mouthfeel. Great persistence with a sweetness that accompanies the entire drink.
Pairings: mature cheeses, blue cheeses, red meats, fatty fish such as smoked salmon or tuna.
