It was a different era! Archaic viticulture followed other propagation routes: first the rootstock was planted and the following year it was grafted in the field with the material chosen by the winemaker. “Mass selection” with many biotypes that offered their small contribution to quality and diversity: this is Vivolo.

Type of soil: Calcareous, sandy, clayey. - Vineyard exposure: South-West. - Vineyard yield: 1-1.5 kg/plant.
Harvest: Manual in boxes, with selection of grapes in the vineyard and morning harvest.
Vinification: Soft pressing, static decantation of the free-run must at cold temperatures and fermentation at a controlled temperature with selected yeasts.
Subsequent refinement on the fermentation lees.

Straw yellow colour
The aromas that are expressed in the glass are white flowers, acacia and hawthorn, fruity like green apple, and with some sensations of spice like licorice.
It expresses itself balanced with a good acidity, aromas reminiscent of those on the nose, and a finish with a pleasant persistent flavour.
Pairings: Starters, fish dishes, including tasty ones, savory first courses, traditional white meats, fresh cheeses.
