Pecorino winemaking
The grapes are delicately destemmed and left in cold maceration for a short time. Subsequently it is softly pressed and the must obtained is brought to a temperature of 5°C for static decantation which lasts 24 hours.
The Pecorino begins fermentation in stainless steel tanks; at two degrees of alcohol, the wine is transferred to barriques, where the fermentation ends: once it is finished, a batonnage is carried out and the wine is transferred to concrete tanks where it ages for about 10 months.
Vinification Verdicchio
The grapes harvested in the coolest hours of the day are destemmed and pressed with a soft pressing; the fermentation proceeds with cold working techniques in steel tanks. The temperature is controlled through a computerized system, which guarantees a homogeneous development of the wine as it evolves, intervening closely in the biometabolism of the yeasts itself.
At the end of fermentation, the now wine remains on the fine lees at a temperature of 10°C and batonnage is carried out every three days after tasting the lees.
Sensory Analysis
Green opening of herbs.
Sapidity right from the nose. Wide and complex, with a great personality, with notes ranging from crunchy fruit to tropical fruit. Mango and passion fruit give way to fleshy white flowers to the soft blonde spice of vanilla.
Powerful and with a remarkable character, savory, soft and decisive entry, creamy, it refers to the juiciness of tropical fruit pulp; creamy notes with delicate spicy hints. Elegant closure in the making.
