IMPERO Brut de Pinot Noir is the latest wine born from the long experience of Fattoria Mancini in the white vinification of Pinot Noir.
The sparkling base, obtained by soft pressing of whole grapes, is fermented in barrique, aged in wood for about seven months and made sparkling with the Classic Method in the property cellar.
The union of the numerous vintages present in the cuvée gives this wine considerable complexity and great persistence.
The typical minerality and salinity produced by the soils of the Focara coast complete an organoleptic picture of strong personality.

Harvest: Mid-August. Harvesting: manual, in 15Kg grilled boxes.
The grapes are cooled during the harvest thanks to 2 mobile cold rooms used for transport from the vineyard to the cellar.
Vinification - Pressing of whole grapes at 9°C and static settling of the must.
Fermentation in barriques at 18°C. - Malolactic fermentation carried out at 100%.
Refermentation in the bottle with the Classic Method.
Aging 7 months in "sur lies" wood with batonage
Main analytical data - pH: 2.90 Total acidity: 7.50 g/L - Residual sugar: 4 g/L
