Clou de Vara' Rosso Premium Plus by the Vara' Pesaresi winery, is the favourite, obtained from a vineyard located on a mixed soil of calcareous clay and sand, overlooking the Adriatic Sea, which requires great care for a minimum yield.

Period and type of harvest: Mid-October, manual harvest, with selection on the plant of the best bunches for integrity and ripening
Vinification and ageing: Destemming and crushing with maceration of the must and with 3 daily punching down in steel vats.
Fermentation no later than 14 days. Racking, subsequent malolactic fermentation.
At the end of January, it is transferred to first passage Allier troncais oak barriques for 12 months. At the end, transfer to steel tanks with subsequent bottling without filtration. Aging in the cellar for 12 months before sale
Note to the consumer
The wine speaks for itself, with its masculine bouquet with notes primarily of cocoa followed by small red fruits blended in nuances of coffee, licorice and morello cherry in the finish.
On the palate it is as sumptuous as it is agile, with an infinite finish.
Pairing: Primarily self-sufficient, with the pleasure of attention. Ideal with red meats and aged cheeses.
Serve in large crystal goblets.
Conservation advice: Bottle always lying down in the dark, in a dry place, without significant temperature changes.
