First harvest 2011 - South facing vineyard
Yield per vine plant 3 kg of grapes - Production per year about 6000 bottles.
Period and type of harvest: Manual, second ten days of October
Vinification and ageing: Destemming and crushing with maceration of the must and with 3 pumping over in thermo-conditioned steel vats. Fermentation over 10 days. Racking, subsequent malolactic fermentation.
At the end of January, part of the wine is transferred to Tonneau or barrique for 12 months. At the end the wine is reunited with the other left to refine in steel.
The wine then bottled continues aging in the bottle for another 12 months
Notes for the consumer
The color in the glass is deep and impenetrable red
the bouquet is a triumph of notes of small ripe red fruits from blackberry to marasca cherry, sour cherry followed by spicy hints of cinnamon, cocoa, tobacco. In closing, floral notes of violet and geranium emerge.
The great structure of this wine requires the correct balance of tannins to express an index of absolute enjoyment on the palate.
Pairings: Hard cheeses and seasoned red meats, baked stockfish with potatoes, oily fish such as anchovies with scottadito. Serve in thin crystal goblets with ample volume.
Conservation advice: Bottle always lying down, in the dark, in a dry place, without significant temperature changes.
