Period and type of harvest: Last week of October, manual harvest with selection on the tree of the best bunches for integrity and ripeness
Vinification and ageing: Destemming and crushing with maceration of the must and with 3 daily punching down in thermo-conditioned steel vats. Fermentation over 14 days. Racking, subsequent malolactic fermentation.
At the end of January, it is transferred to second passage Allier troncais oak barriques for 12 months. At the end, transfer to steel tanks for 3 months and subsequent bottling.

Note to the consumer
Floral hints of linden and honey. Notes of yellow plum and avocado follow.
On the palate, sapidity and softness are evident, in the finish nuances of honeyed notes.
Pairings: Hard cheeses with long aging, red meats.
Serve in thin crystal goblets with ample volume.
Conservation advice: Bottle always lying down, in the dark, in a dry place, without significant temperature changes.
