Nona Luna Marconi Italian Red Wine with final aging 12 months in the bottle.

 

Vinification of Lacrima di Morro d'Alba
The start of fermentation takes place in 70 hl horizontal steel tanks with the temperature set at 25-28°C to favor the extraction of the coloring substance contained in the peel and preserve the aromatic heritage.
On the third day of fermentation, the separation from the grape seeds is carried out to keep the wine's soft tannins.
The wine is not pumped over as the fermenter used is a rotary fermenter: the product is rotated for 5 minutes every 3 hours so as not to form a cap and leave the pomace permanently immersed in the must. Once the alcoholic fermentation is complete, 50% of the product is first placed in steel tanks for about a month (to clean the new wine), then transferred to tonneaux (500 l) where it remains to mature for about 10 months.
The remaining 50% matures in small steel tanks.
Malolactic fermentation: yes, with selected bacteria inoculated in conjunction with the start of alcoholic fermentation.
Vinification of Petit Verdot
The Petit Verdot is vinified in vertical fermenters with a pumping over system. Once the fermentation with selected yeasts has started, daily pumping overs are initially carried out, alternating closed pumping over with air pumping over.
The fermentation temperature is set at 24-26°C in the first phase of fermentation and 28-30°C in the final phase. During the entire fermentation period 3-4 Delestages are carried out, during which this is taken advantage of to remove the seeds.
After fermentation, the now wine is transferred to new medium toasted barriques (Allier and Never) where it rests for about 12 months. The Blend of the three addendums (tear in tonneaux, tear in steel and Petit Verdot in barriques), is carried out in cement tanks where it rests for 3 months, after which it concludes the maturation in steel.
Sensory Analysis
Hints and flavors that fall within the "spicy" range and it is precisely for this reason that we thought that its spicy notes could marry perfectly with the super floral and aromatic Lacrima wine which in this blend softens without losing its fragrance, and is surrounded from notes of coffee, chocolate, vanilla without ever losing its typicality.
