The new frontier of wine sector is producing wine without added sulfites.
Type: red wine without sulphites
Classification: Piceno DOC Superior
Grapes variety: 70% Montepulciano, 30% Sangiovese
Location the Marche, province of Ascoli Piceno, commune of Acquaviva Picena.
Soils alluvially-deposited seabed sediment, rich in sand and rock, as well as outcroppings of pre-historic ammonites and marine fossils.
Aspect and elevation Southeast at 250 m.
Vineyard density 2.220 vines per Ha.
Yield 9 t. of grapes controlled through bud reduction and cluster-thinning at veraison.
Training system vertical trellising and double guyot.
Vinification in steel fermenters, without adding sulphites; maceration on the skins for 17 days with frequent pumpovers each day, especially at the beginning.
Maturation the wine matures for 12 months in barriques, then ages in bottle in temperature-controlled storage.
Alcohol 12,50 % vol. Total acidity 5,80 g/l Residual sugar 1,80 g/l
