Vinification: Natural drying, fermentation for 15 days in steel tanks at a temperature of 24 ° - 26 ° C.
Aging: 12 months in steel, 36 months in 25 hl oak barrels and 12 months in bottle
Organoleptic characteristics
Ruby red color with purplish highlights.
Bouquet that initially evokes elegant balsamic nuances such as licorice and rosemary. Followed by hints of red fruits, plum and black cherry.
Soft and velvety taste, well balanced, of high elegance and persistence
Pairings: Game, red meats, braised meats, pork dishes, polenta and ossobuco
Serve in a Riedel Bordeaux 416/00 glass, taking care to open the bottle at least 1 hour before serving or better in a decanter.
The goal is to carry on with firm conviction the work of enhancing the indigenous grape variety, Vernaccia Nera and to preserve its traditional drying, still carried out in a natural way today.
The local winemaking methods have been combined with the experience of external technicians, both in the vineyard and in the cellar, aimed at a style of agriculture that is attentive and responsible towards the environment, collaborators and the local community.
