Vinification and aging: The harvest is late in the second half of October and is done by hand.
After the soft pressing and destemming, fermentation takes place on the skins at controlled temperature to accentuate all the aromatic peculiarities of the grapes.
The base wine thus obtained is sparkling with the Martinotti method and after a long second fermentation it is bottled.
Organoleptic characteristics
Intense ruby red with purple nuances, floral scents of pink and purple and fruity currants and blueberries with herbaceous and spicy notes, fine bubbles with soft and persistent red foam, the taste is sweet but not cloying, with good persistence and excellent appeal.
Pairings: Ideal for dry, rustic pastry desserts, dessert with red fruits or with red jams or alone for a cheerful toast.
