Harvest: Selected and overripe grapes harvested by hand and placed in small crates in the second ten days of October.
Vinification: Selection of racking obtained from the fermentation (overall of 20-25 days) at a controlled temperature (from 22 to 28 °) in French oak vats, with daily manual breaking of the cap. Pressed with a soft press and decanted into steel tanks to rest for 24 hours, it is then placed in new French oak barrels combined with the noble lees, with batonnage every 8/10 days for a period of 12/18 months.
Aging in the bottle for 12 months.
Organoleptic examination
Ruby red color with purple reflections.
Very intense aromas that explode on the nose showing all its complexity.
The sensations of black cherry jam, blackberries, plums, licorice are excellent. Spiced fusion of vanilla, cinnamon, pepper. In the mouth, warm and soft, noble tannins, it stretches in the final with a firm and intense flavor.
The balance of the component parts well present give it an extraordinary body.
Pairing: succulent dishes, stockfish all'anconetana, “raguse in porchetta”, grilled meat, braised meats, stews, game, aged cheeses.
Cellar equipped with modern and rational steel fermentation tanks, truncated cone fermentation vats in French oak, all at a controlled temperature for the vinification of quality red wines and small wooden barrels for the "élevage" of the wines undergoing refinement.
