T.T. it is a status artis wine conceived and produced to be consumed with the right people, produced from a small plot of the Eroico di Monteroberto vineyard at 300 meters above sea level.
It is a CRU coming from a vineyard exposed to the West and cultivated organically.
Grapes harvested at the moment of full phenolic maturity, traditional vinification and aging for at least two years first in wooden eggs and subsequently in the bottle. A definitive red wine.
It is a long-lived wine capable of evolving in the bottle for at least 10 years if respected.
Type: Luxury Red - First harvest: 2020, 1449 bottles in double thickness antique glass of 750 ml and 1500 magnums
Vineyard: Eroici di Monteroberto company plot of approximately 7000 m2 (0.7 ha) on a high hill with a 35% slope in organic cultivation
Soil: sandstone marl with a sandy consistency
Grapes: pure grenache - Grape yield per single vine: 2.0 kg
Harvest period: first ten days of October, manual harvest, with on-plant selection of the best bunches for integrity and phenological maturation
Vinification and refinement: destemming and pressing with maceration of the must in submerged caps in thermo-conditioned steel. Fermentation within 14 days. Racking off, subsequent malolactic fermentation.
In January, transfer to the 850 liter wooden egg for 12 months.
Bottling and further refinement in the bottle for at least 12 months before sale for consumption
Organoleptic notes
Color: deep ruby
Nose: clear rose, mulberry, Mediterranean scrub, cedar wood with puffs of black pepper
Taste: very elegant, silky, dense, soft, of medium acidity
Pairings: lasagne and vincisgrassi, stockfish with potatoes, pork, roasts and long-matured cheeses. Serving temperature and glass: 16° C in thin, large-volume crystal glasses
Storage advice: the bottle should always be kept lying down, possibly in the dark, in a dry place at a temperature between 14 and 16 °C, without significant temperature changes.
