Spurred cordon training. - Yield per hectare of 90q.
The harvest is done by hand, on all 12 hectares of red vineyard, after mid-August or the first of September. Only the not yet ripe bunches are harvested (with the stem still green), this will give the wine the right freshness and the alcohol content not too high.
Vinification with "direct pressing" of the grapes or in white (the must does not have contact with the skins), the first must (free-run must) that comes out of the soft press is used and left to ferment in steel vats at low temperature for 15 days .
Maturation for 2 months in steel.
Organoleptic notes
Color from salmon to deep rose petal.
Product that plays more on freshness and aromatic characteristics linked to fermentative aromas, from the floral of dog rose to the fruity of apple and peach. Furthermore, balance and harmony are recognised.
Pairing: as an aperitif, with appetizers, pizza, focaccia, vegetarian dishes, fish, white meat, less elaborate dishes, fresh cheeses.
Cellar equipped with modern and rational steel fermentation tanks, truncated cone fermentation vats in French oak, all at a controlled temperature for the vinification of quality red wines and small wooden barrels for the "élevage" of the wines undergoing refinement.
