Vinification technique: fermentation with pumping natural, periodic and programmed at a controlled temperature throughout the period, using pumps, using the gas naturally produced by the fermentation thanks to the latest method "Ganymede".
Ageing: about four months in stainless steel tanks. Refining: about six months in bottle.
Organoleptic examination:
Ruby red with violet hues.
Bouquet distinctive, pleasant and vinous with hints of red berries.
Fruity, dry, harmonious and with good aromatic finals. Not too challenging.
Pairing: great for Autumn cuisine, such as vincisgrassi - (a Marche version of lasagna) tagliatelle al ragu - (meat sauce), braised and stewed meats, pigeon with a sour cherry sauce and partially aged cheeses.
