Locality Contrada Calcinara, located in the town of Candia (AN)
Terrain composed of clastic pelitic rocks, marl and calcarenitic banks. Sandstones.
Texture: clayey-sandy. - Soil rich in limestone and marine fossils
Exposure and altitude 200 meters above sea level - South, South-East exposure. Part of the steepest vineyard. Training system: Spurred cordon - Planting density: 4000 plants per hectare
Yield: 40 hl of wine per hectare
Manual harvest
Winemaking - Indigenous fermentation without pied de cuve. High fermentation temperatures. Post-fermentative maceration for 20-35 days depending on the vintage with spontaneous malolactic fermentation on the skins. Racking and batonnage for the following years
Aging 12/18 months in French oak barriques. Assembly in tank and rest for 1 or 2 years. Bottle refinement
Organoleptic examination
Intense, impenetrable ruby red
Complex, elegant, open, spicy, cocoa powder and slightly earthy. Cloves, tobacco, black pepper and light coffee fragrance
Full-bodied and tasty. Rich but velvety tannins.
Material shelf-life 15 years and more. Alive and bright in the first 5 years. Increasingly complex in the years to come
Pairing: Ideal with game, lamb, roast meats, grilled red meats with balsamic vinegar. Complex pairings with game prepared with cocoa powder or coffee
