The classic chicken galantine is the typical rural product of the Marches tradition, a flat time of the festival days, that is a galante dish.
Ready for consumption is excellent with pickled vegetables, with boiled eggs and anchovies in salt, fabulous with mixed fruit compote, candied tomato slices, stuffed olives in oil and not to be disregarded with black truffle rods and cubes of jelly.
As a main course, the galantine is accompanied by boiled and strascinate (sautéed) country vegetables or Russian salad with diced jelly.
Ingredients: the classic production derives from the union of chicksen, boned and stuffed only by hand, with beef, pork, enriched with cubes of mortadella, cooked ham, raw ham, hard-boiled eggs, pistachios, vegetables and green olives and black.
The harmony of flavors merges into a very pleasant whole and the preparation, thus obtained, is closed and tied by hand. All steamed for about 7 hours.
