Fior di prosciutto (or culaccia) is nothing more than a culatello with pork rind.
It is the best part of the ham without a stem and without a bow, leaving a small shell-shaped ossicle (in jargon anchetta) that serves to recognize this part of ham.
Produced with careful selection and skillful boning of the fresh leg of our local Marche pork
