del Cerro il Matelica di Belisario - Vinified exclusively with Verdicchio grapes grown on the eastern slopes of the Alta Valle Esina at the foot of Monte San Vicino.
Produced with thermo-controlled white vinification, it is the stereotype of Verdicchio di Matelica: power and elegance, flavor and softness, maturity and freshness.
Production area: along the Upper Esina Valley, on the slopes of Monte San Vicino
Soil: medium mixture tending to loose
Exposure: at noon
Altitude: average of 350-450 meters above sea level
Harvest: carried out manually in October, with selection of the bunches in 20 kg crates.
Vinification: in white temperature controlled, lasting no less than 25 days
Maturation takes place for five months in stainless steel tanks
Organoleptic examination
Very clear and crisp straw yellow
A thin, slender and fresh mouth
The nose is intense but a bit varied in its declinations: white fruit but also citrus
The great continuity of the nose is then confirmed in the mouth with a good persistence, freshness and acidity
Pairings: intended for hot appetizers, first courses or elaborate fish
Verdicchi are typical because the system is unrepeatable and unreproducible: this is the value, the pride and the greatest responsibility: being a style, not a fashion.
