A wine of great freshness that enhances the typical nature of this historic vine both when young and after a few years of maturation.
Production area: municipalities of Offida (Borgo Miriam) 293 m above sea level. and Castel di Lama (San Francesco district) 201 m.s.l.m. Yield per hectare: 90/100 quintals. Soil type: clayey/medium texture.
Training system: guyot, 3,300 plants per hectare.
Harvest period: first/second ten days of September.
Vinification: crushing-destemming, cooling of the crushed grapes, cold maceration in the press (3-4 hours at 12°C) and subsequent soft pressing. This is followed by cold static decantation for 24-48 hours at 5°C, alcoholic fermentation and subsequent refermentation in an autoclave for secondary fermentation, which occurs very slowly (18-22 days).
Refinement in autoclave: at the end of the secondary fermentation, the wine remains for 5-6 months on the "fine lees" at a controlled temperature (13°C) with periodic resuspension of the yeasts (batonnage).
Bottle maturation: after bottling, the product remains to mature in a thermo-conditioned cellar for a minimum of 3-4 months.
Sensory analysis
Pale straw yellow with green reflections,
fine and persistent perlage, balanced with a fragrant and delicate finish at the same time.
The pleasant scent of white fruit and citrus fruits is striking on the nose, blending and complexing with floral and yeasty hints that derive from the long maturation.
The taste expresses great freshness and balance in all its soft and fragrant/citrusy components.
Consumption occasions and pairings: Its ease of drinking and soft structure make it very pleasant as an aperitif. Excellent with fish starters and a wide choice of seafood dishes.
From the grapes, to the vinification and aging of the wines, up to the bottling, the objective to be achieved must coincide with the Total Quality in order to offer good, healthy and certified organic wines to achieve full consumer satisfaction.
