The harvest and selection of the grapes takes place by hand for an optimal drying in special wooden boxes for 2 months.
In the cellar the soft pressing of 92% of dried black Vernaccia and the rest of 8% of freshly pressed Merlot takes place.
Fermentation takes place in barriques for 10-11 months.
The final refinement takes place in the bottle for at least 6 months.
