The monovarietal extra virgin olive oil from Rosciola is an extra virgin olive oil obtained from the 100% Rosciola variety which is one of the best pollinators of the Ascolana Tenera olive.
The variety is very precocious and already in mid-September, it is possible to collect it to prevent this very soft olive from falling apart and causing it to oxidize.
It is a very delicate oil, with hints of ripe yellow fruit, peach and banana, level of bitter and light spicy; It is suitable to accompany fish dishes, vegetables or desserts.
To guarantee the quality, it is important to bring only the best olives to the mill, and perform the extraction in the evening of the same day in which they were collected. Only in this way can a large oil be obtained, and avoid oxidation.
The oil is cold-pressed with a continuous 2-phase system, without exceeding the temperature of 28 ° C.
