The high quality of the Ascolana del Piceno DOP olive cannot be found in other types of olives.
The pulp is firm, tender and the edible part is easily separated from the stone, characteristics which increase the value of this olive thanks to the judgments of expert tasters.
The olives are harvested by hand, without mechanical means to avoid bruising.
In brine, olives can be stored for about a year. Before being consumed, they can be desalted by immersing them in fresh water for a while, depending on the level of salinity you prefer.

This olive is highly sought after and appreciated by great chefs, because it is perfect for accommodating a meat filling and being fried to become the famous Ascoli olive.
