Still and dry white wine

First harvest bottled: 1991 Chardonnay - 2009 Pecorino
Production areas: Ascoli Piceno and Castel di Lama
Average altitude: 200 meters above sea level
Soil: medium mixture tending to sandy. Plots facing north.
Training system: guyot.
Plant density: 5,000 plants per hectare.
Yield per hectare: about 70 quintals of grapes.
Yield per vine: about 1.5 kg of grapes.
Harvest: Late harvest, early in the morning or in the late afternoon, carried out by hand in small crates placed in cold storage before arriving in the cellar.
Vinification: Light cryomaceration of the grapes, soft pressing and start of fermentation in steel tanks.
Once fermentation has started, 50% of the must-wine is transferred to new barriques, the remaining 50% ends the fermentation in steel.
The wines come together for bottling about 24 months after the harvest
Sensory analysis
Brilliant straw yellow with evident golden reflections.
Elegantly structured and deep, with intense notes of white flowers and ripe fruit, followed by heady vanilla.
Great structure and persuasive opulence, involving, penetrating and very persistent.
From the wine we learned patience, waiting for the time needed to obtain intense sips, with an incomparable flavor.
