Vinification area: ìStacciola. Marches (PU). - Soil type: medium texture - clayey.
Harvest time: third ten days of September
Harvesting method: grapes harvested by hand in small crates, selection of grapes in the vineyard by thinning and various stages of harvesting.
Vinification: immediately after arrival in the cellar, the grapes are immediately destemmed. The still whole grapes are placed in steel vats, where, through punching down and pumping over, they give the characteristic color to the fermenting mass.
Fermentation takes place at a controlled temperature.
Refinement: 4/5 months in steel vats, 2 months in bottle
Organoleptic test
Limpid, ruby red
Red, pink and purple flowers; notes of red berried fruit, crunchy cherry and plum. Vinous
Dry, warm, soft, fresh and with good tannins.
Pairings: It goes perfectly with grilled meats and not too complex meat preparations. Perfect with aged cheeses and local cured meats.
