The vinification lasts four weeks and takes place in steel tanks with constant temperature control. It is then released in French wooden barriques. The start of the temperature initially occurs with indigenous yeasts, the inoculation with the selected yeast occurs when a gradation of 5-6% of alcohol has been reached.
