The result is an absolutely intriguing and refined Pecorino, which wins you over with its complex and articulated character, making it one of the best whites of the appellation to which it belongs.
It is a white from the Marches in which the components of the vine and terroir merge with a skilful processing in the cellar, carrying out daily batonnage and permanence on the fine lees.
Supported by a strong backbone, it is a Pecorino to be forgotten for a few years in the cellar, so as to appreciate, in some time, its sure evolution.
Tasting Notes
Straw yellow in the glass.
Flral and fruity on the nose, with hints of white flowers and tropical fruit, at the first taste, more direct to follow, notes of Williams pear and pleasant mineral nuances.
Very fresh on the palate, guided by decidedly citrus tones and slightly savory at the end.
Pairings - It can accompany preparations based on fish or white meat. Try it with chicken with almonds or with mixed grilled fish with salmoriglio, exceptional with the classic Piceno DOP Ascoli olive.
