In 2015, Ciotti Emidio, an entrepreneur dedicated for over 30 years in the environmental sector, decides to "Return to the Origins", or to make his own those activities that since he was a child he had seen his father do in the countryside, taking care of the land and dedicating himself to the production of oil and wine.

In recent years the family has always managed the activities directly, with innovative and sometimes courageous choices but, always maintaining the respect for traditions and for the territory unchanged.

Today the company is divided into different sectors, the environmental one, where the son Giacomo Ciotti carries on the path taken by his father, the restaurant and hotel sector chaired by his daughter Anastasia Ciotti who with the support of his partner Manuel Pasquali carries on the eno - tourist agri.

Tender Ascolana Olive Oil

Our extra virgin olive oil has a very low acidity and fruity aromas reminiscent of: tomato, artichoke and almond, it is rich in polyphenols, omega 3 and omega 6, all substances that help our health.
To ensure their quality, it is important to bring only the best olives to the mill, and to carry out the extraction in the evening of the same day they were harvested. only in this way can we obtain a great oil and avoid oxidation.

The oil obtained from the tender Ascolana olive is highly sought after thanks to the aromas it releases. It is highly appreciated by chefs for its lightness and slightly bitter taste.
Our oil is cold pressed with a continuous 2-phase system, without exceeding the temperature of 26 ° C, in the absence of oxygen.

Our oils have a high antioxidant content, high content of fat-soluble vitamins a, e, k, d. high percentage of oleic acid. it does not contain cholesterol. It has a content of essential fatty acids in a ratio equal to mother's milk, it degrades less when cooked and is highly digestible.

The entire scientific community converges on the need to have proper nutrition in order to ensure a healthy life. the daily use of extra virgin olive oil, due to its proven properties, plays a central role in the "Mediterranean diet", for all age groups.

Grapes eco-sustainable method

The Piceno territory was formed in the Pleistocene period, from arenaceous-pelitic deposits composed of sands, limestone and clays, with the presence of skeleton, coming from the retreat of the seabed.

The cultivation of the grapes takes place in an eco-sustainable way respecting the life cycle of foraging insects and favoring the development of all useful insects.

The ripening of the grapes is constantly monitored by sensory analysis to detect perfect aromatic, chromatic and polysaccharide maturity.

The harvest takes place early in the morning to preserve the freshness of the grapes and avoid the thermal oxidation of the typical aromas of the vine, in boxes of 10 kilograms, in the period that varies according to the types of grapes, from the second decade of August to the second decade of September.
