Organoleptic examination
Intense, quite persistent, fruity with hints of morello cherry, ripe peach, plum, with aging it reveals hints of liquorice root and floral (withered red flowers)
Dry, warm, quite soft, quite fresh, savoury, appropriately tannic, full-bodied, quite harmonious, with a subtle bitterish taste persistence.
With aging it becomes more harmonious, expressing subtle hints of goudro.
Pairings - In youth: first courses with pork ragout and giblets, "raw and cooked" cured meats, bean, chickpea, lentil soups, polenta with sausage, grilled meats, spit-roasted or grilled farmyard animals.
When mature: more structured dishes such as second courses of baked pork, roast beef and farmyard animals, cooked in a pan or in the oven with oil and herbs, medium-aged non-spicy pecorino cheeses.
