Carpegna DOP Gran Riserva raw ham on the bone, aged for 20 months, although recognizable among the sweet raw ham, stands out for its intense aromatic profile.

 

A bouquet of scents and aromas, the typical ones to which Carpegna has accustomed us, in their highest expression thanks to the long maturation. An intense aromatic profile, particularly perceptible if cut by hand. The surprising softness of the slices, revealed by Carpegna DOP when sliced ​​by machine. Both cutting solutions reveal Carpegna's long tradition.

In the Carpegna laboratory alone there are ten master butchers who pass down their secrets from generation to generation. They dedicate themselves daily to the production of a rare specialty, with the passion that only the awareness of giving life to a unique product can instill. Every day, in the patient silence of work rituals that are transformed into charcuterie art. Gestures as subdued and invisible as they are haughty and noble in their methodical nature.

The filling based on pepper and paprika together with the unique microclimate in which it ages give a scent and aroma, if not spicy, but decidedly characteristic enough to make it unmistakable when tasted in comparison.

The drying phase affects both the chromaticity and the texture of the slice which stands out for its delicate amber color, for an intense aromatic profile, particularly perceptible if cut by hand, and for an unparalleled softness on the palate.

Raw material: heavy Po Valley pig, minimum age 10 months, coming from 3 regions of Marche, Lombardy and Emilia Romagna.

Ingredients: Italian pork leg, sweet salt from Cervia.
