Beretta since 1812

Every day, in the patient silence of the rites of work that yes
they transform such subdued gestures into charcuterie art
and invisible they become haughty and noble in their methodicality.

Prosciutto di Carpegna PDO offers a bouquet of fragrances and aromas as unique as the Italian excellences deeply linked to the territory
This ham is aimed at the most refined palates with the best interpretation of an ancient and unique art of Italian charcuterie.
The processing of Carpegna PDO is unique, it takes place only in the Marche region and of this land it preserves the unique, sweet but decisive flavor of things made according to tradition.
Each incredibly soft slice is the result of a work perfected over time, a great skill and craftsmanship still preserved today by only ten master ham makers.
A unique ham, a prodigy of taste that has been happening in the same way for centuries.
It is produced exclusively with the legs of pigs born, reared and slaughtered in the Marche, Emilia Romagna and Lombardy. For centuries the salting has taken place with salt from the Cervia salt pans.
Prosciutto di Carpegna PDO is perfect to taste alone in thin slices, but also excellent as an ingredient for the preparation of dishes such as ham and ricotta crepes, risottos, white wine rolls and Roman saltimbocca.

Carpegna PDO is a ham of rare goodness, the result of the characteristics of a territory nestled in the Sasso Simone and Simoncello Natural Park in the province of Pesaro and Urbino.

Carpegna has always been a pig breeding area as it is rich in oaks that provided the food base for the animals.
The light breeze that comes from the Adriatic reaches the hills of Montefeltro and helps the drying and seasoning of the thighs that are periodically exposed to it.
It is the territory that gives its flavor to the hams produced in compliance with the tradition and skill of the local artisans.

In Carpegna, day after day, ten master butchers are dedicated to the processing of a ham that faithfully reproduces the traditions of the place, preserved intact from the distant Middle Ages until today.
