Sapa is a typical Marche condiment where it is considered among the typical flavors of peasant food.

It is a syrup that we get from cooking Sangiovese grape must.

The must is left to cook slowly and for a long time, the sapa is ready when it has reduced by two thirds of its initial quantity.

It has a sweet and sour taste and an amber color, it is preserved for a long time thanks to the sugar content.

It goes well with seasoned and savory cheeses and also goes very well as a condiment for soups, veloutés, meats and salads, also excellent as a sauce for ice cream and fruit salads.

 

It has very ancient origins, used by the Romans to replace honey, it was also an ingredient of a simple and homemade grenadine, mixed with a handful of white snow, it was the joy of children.
