Vineyard: Exposure: south - Soil: clayey - Training system: espalier
Pruning: spurred cordon - Plant density 3300 plants per hectare.
Harvest: Over-ripening on the vine, manual harvest from mid-October.
Three distinct vinifications: one part by drying in boxes, fermentation and long maceration on the skins for about 3/4 months.
Classic Montepulciano processing.
Aged in barrique for 18 months.
Organoleptic characteristics
Intense red.
Good body, hints of red fruits, pepper, licorice, balsamic, lively tannins, pleasant softness and persistence.
Pairing: braised red meats, aged cheeses, excellent with ciauscolo and other typical cured meats.
Satisfaction for those of wine is a true lover.
The importance of making vinifications in small quantities, to understand the differences from year to year and to be able to trace the best way forward, thanks to a perfect vision of the influences of the microclimate and of the different working phases.
