Cotechino is a poor sausage, produced with the less noble pork meat (rind, nerves and lean pieces), stuffed into natural casing, left to dry for a couple of weeks at most.

It is traditionally consumed at Christmas, after a long cooking, necessary to gelatinize the collagen of the rind and meat.

Once cooled, it is cut into slices and added to the lentils in the final stage of cooking.
