"Monte Gemmo" Borlotti Beans are reddish brown in color with the classic red veins typical of borlotti beans grown in central Italy.
Their skin during cooking remains intact, an important quality for aesthetic purposes for the composition of the dishes.
Cooking times and methods: Soak for 12 hours before cooking. Cook for about 40 minutes in a pot with six parts of water and one of Fagioli over a low heat.
