The visciolata del cardinale, a typical drink from the Marche region, is obtained in compliance with the peasant tradition, from wine made from fine grapes, sour cherries and sugar, according to an ancient recipe from the mid-19th century.
The long production cycle and the particular processing make it a unique and precious meditation drink, to be enjoyed in company.
It is consumed in small glasses, at a temperature of 13-16 ° C, at the end of a meal, in combination with pies, chocolate or vanilla-based desserts, panne cotte and, in particular, with all dry pastries.
If stored at cellar temperature it can be aged.
Type of Grapes / Ingredients: Montepulciano and Cabernet Sauvignon, Visciole and Sugar
Processing method: Ripe sour cherries, with the addition of sugar, are placed in the sun in glass jars from June to September. The aromatic nectar produced is processed for about 12 months together with the must of Montepulciano and Cabernet, according to an elaborate recipe that has been handed down for generations.
