Manual harvest , in small crates.
Vinification: cold processing of the grapes, fermentation in amphora, maceration with the skins for at least 4 months with manual punching down three times a day.
Aging in amphora with batonnage for about 6 months
Organoleptic examination
Rather deep golden yellow.
Articulated aromatic range, alternating ripe and refreshing scents, nuts, cucumber and green tea, candied fruit, anise and hay.
Good progression on the palate, where maceration in amphora enriches, projects on mature tones, finds in the percentage of Passerina the adjuvant to dilute at least in part the varietal pungency of acidic charge and minerality, which come back in evidence in the finish. Destined to evolve positively.
