Harvest: Selection of grapes harvested in full maturity.
Vinification: Soft pressing, static defecation, fermentation at controlled temperature (<20°) in stainless steel tanks for 2-4 weeks, without preventing malolactic fermentation.
20-30% of the wine is fermented in 500-litre oak barrels and remains on its lees until bottling, which takes place after 16-18 months.
