The "DONNA ORGILLA" takes its name from the ancient feudal lord of Cossignano.
This particular white wine is obtained from autochthonous “pecorino” grapes, an ancient Marche vine native to the Picena area. Since 2011, pecorino wine has been a recognized DOCG.
The high total acidity and the high sugar content make it a wine with a particular structure.
Soil: clayey - Vineyard: Sacrì - Surface area: 1.2 Ha
Planting density: 5000 vines/Ha - Training system: simple Guyot
Altitude: 300m. orientation N-E - Average per vine: 1.5/2 kg/plant
Grapes grown organically. The vineyard is fertilized with leguminous green manure, organic fertilizer and permanently covered with grass.
Manual collection in boxes.
Vinification: Destemming and immediate soft pressing, maceration at less than 10°C for less than 18 hours. Spontaneous fermentation with its own selected indigenous yeasts only in steel. Controlled alcoholic fermentation at less than 18°/20°C.
Maturation on fine lees for 6 months. Aging in bottle for 2-4 months.
Organoleptic characteristics
Straw yellow in color with greenish reflections,
the nose has notes of fresh white flowers and tropical fruit with citrus notes.
Excellent acidity, minerality, sapidity with good persistence and harmony. Light pre-bottling filtration.
