Vineyards: 1.5 hectares, 25 years of age.
Northern exposure. Organic run since 1995.
Soil: medium-textured soil, rich in limestone.
Pruning: bilateral Guyot. Performed directly by the company staff.
Harvest: manual, in small boxes to preserve the integrity of the fruit, in mid-September.
Vinification: soft pressing, slow fermentation at low temperature, maturation on the fine lees for 4 months in steel.
Sparkling wine : The base wine was bottled in May with the addition of yeast and 24 g / l of sugar (draft). The refermentation took place in the bottle (classic method), with the bottles placed on the pupitre for manual "remuage". In November, after approx. 30 months, disgorgement took place without the addition of "liqueur d'expedition".
Organoleptic examination
Straw green in color, the scent is exuberant with unripe plum and fennel seeds.
The palate is, as always, slender and extremely pure, thanks also to the absence of shipping liquor, or final sugaring, with an obvious richness, the daughter of a vintage that has already become a legend in Italy for red wines.
Carbon dioxide emulsifies the center of the mouth, and in persistence the vegetal notes alternate with those of flour.
The light of Verdicchio di Matelica.
