A new "drinking style", this is what we wanted to achieve with our wines.
Wines with an important identity, which find their true distinctive character in their drinkability and pleasantness.
Identity / Instinct - I draw inspiration from the native vines, grown in our organic vineyards, to obtain modern wines with an authentic feel, of great elegance and balance.
My idea of wine is inspired by the peculiarities of the vineyard itself. Land, sea and important native vines. The MAZZOLA method starts here. We capture the essence of these elements and transform it into wine.

A constant technical control of the grapes allows us to grasp the exact moment for the harvest "... but the style of our wine depends above all on tasting the grapes and when we believe that they fully express our vineyard".
The harvest takes place exclusively by hand, the grapes are delicately deposited in boxes and immediately taken to the cellar to begin the winemaking process.
As the vintages follow one another, the vinification takes into account the climatic factors that mark the vintage to respect the style of our wine.

Technology / Tradition - We adopt the best technologies that can enhance the character of our vineyards, drawing inspiration from tradition but adopting new criteria and cutting-edge solutions (Ganimede method) that enrich our wines with new nuances and make them unique.
Aging for at least 2 years - All our wines are aged for at least 2 or 3 years in our cellar, first in the barrels and then in the bottle.
The natural refinement techniques, sur lie and with continuous batonage, allow the wines to evolve and refine until they reveal the complexity, elegance and balance typical of our style.
