Only the local milk, given by the associated producers, is transformed into fresh and / or seasoned, PDO, TSG and typical cheeses, which derive the added value that characterizes them from the location and the link to the territory.
The members of the Trevalli Cooperlat cooperative are agricultural entrepreneurs and the enhancement of the milk of the members represents an essential chapter of the Articles of Association.
Casciotta di Urbino PDO is a great quality aged cheese, simple, but with a great history behind it that makes it unique all over the world. 100% Italian milk.
It has a very characteristic sweet taste, a soft and crumbly paste with slight holes.
Traditionally, it is served with mountain or common bread, accompanied with broad beans, eggs, salami, lard, ham, "Ciauscolo" or with slices of toasted polenta.

We are in Jesi city of Federico II, of G.B. Pergolesi and Verdicchio.
The perfectly preserved city walls were built on the previous Roman route between the 13th and 14th centuries. Equipped with doors, square, polygonal and cylindrical towers and curtains crowned by corbels, it was enlarged by the great military architect Baccio Pontelli in the fifteenth century.
