The grapes come from a vineyard made up of 3,500 very old vines reared double overturned on a soil composed of flisch, yellow marl and limestone facing South / East at 430 meters above sea level.

Vinification: soft pressing with whole grapes in reduction (the press is saturated with CO2) with subsequent spontaneous fermentation in steel and cement.
